Desserts are very possible on the no-wheat diet. I was amazed to discover a large amount to recipes that do not use wheat as an ingredient. I had never actually thought much about it before getting off wheat. Allah has really blessed mankind with so much!
- 1/2 cup walnuts
- 16 ounces very good white chocolate, finely chopped
- 1/4 cup dried cranberries
- 1/4 cup medium-diced apricots
Preheat the oven to 350º F.
Next, place parchment paper on a baking sheet. Draw a rectangle 8-inches by 10-inches onto the paper. Turn the paper over. You should be able to see the rectangular indentation.
Put walnuts on a baking sheet. Bake for about 8 minutes. Remove from oven and let cool. Then chop them roughly into large pieces.
Melt chocolate. Put 3/4 of the chocolate in a glass dish. Microwave on high for about 30 seconds. It’s best to time this yourself with a watch.
Open microwave door and stir chocolate with a rubber spatula.
Microwave again for another 30 seconds and stir again.
Continue this cycle until chocolate is just melted.
Remove completely from microwave and immediately stir in remaining chocolate. Stir often until chocolate is smooth and there are no lumps. You can re-heat for 15 seconds at a time if you need to.
Next, pour the melted chocolate onto the parchment paper. Use a rubber spatula and spread the chocolate to fit the shape of the rectangle.
Sprinkle walnuts, cranberries, and apricots onto the chocolate.
Let harden for 2 hours, or for 20 minutes in the refrigerator.
When cooled, cut chocolate into pieces. Serve.
